Sesame Hummus

This sesame oil spiked hummus was served alongside our succulent lamb koftas and homemade flatbread – it paired beautifully.

Ingredients

  • 2 tins of chickpeas
  • 2 tbsp tahini
  • 1/2 tsp chicken stock powder
  • 3 tbsp olive oil
  • 2 garlic cloves
  • Zest of half a lemon and juice of one
  • 2-4 tbs harissa paste

Directions

  1. Crush garlic and lightly fry in a pan with olive oil. Set aside to cool.
  2. Place all ingredients in food processor. Blitz for two minutes. Scrape down sides.
  3. Continue blitzing for another two minutes. During this time, slowly pour ice cold water into the blender, until desired thickness is achieved.
